Sarson Ka Saag Recipe: Celebrate Lohri with Healthy Greens

Celebrate Lohri and invite friends at home and serve the delightful dish of sarson ka saag and makke ki roti. Enjoy the delicious greens on this auspicious occasion.

Ingredients

Sarson (mustard) leaves- 500 gms
Spinach and bathua- 100 gms
1 onion, 250 gms tomatoes
3-4 garlic and chilli
Ginger
2 tbsp ghee

A pinch of hing (asafoetida)
Half tsp cumin
Half tbsp turmeric
Salt
Half tbsp corn flour
2 small pieces of jaggery

Step 1

Begin by washing all the greens. Cut them and put them in a pressure cooker. Turn off the gas after one whistle. Transfer the contents to a bowl and let it cool.

Step 2

Grind onions, garlic, and tomatoes to form a paste. Take a pan and fry the corn flour until it turns brown and keep it separate. In the same pan, heat oil and add cumin and hing.

Step 3

After roasting cumin seeds, add turmeric, followed by the onion-garlic paste. Fry until the oil separates. Meanwhile, prepare a paste by grinding the greens in a mixer.

Step 4

Whild grinding the greens, add jaggery to it. Ensure not to add too much of jaggery as that may change the taste of the dish. Then, add the greens to the pan for tempering (tadka).

Step 5

Add the roasted corn flour with the greens. Add salt to the dish as per taste. Keep stirring for 10 minutes. Once cooked, the dish will emit a delightful aroma.

Enjoy!

Once the dish is cooked, turn off the heat, and drizzle some desi ghee on top. Your sarson ka saag is ready. Enjoy with makke ki roti!
