Morning meals should be nutritious and fulfilling. Idli, a South Indian dish, is loved by everyone and makes for an ideal breakfast option.
1 cup sooji
2 cups spinach
1/3 cup grated carrots
1 cup curd
1 tbsp urad dal
1 tsp chopped ginger
2 green chillies
1 tsp cumin and mustard seeds
¼ tsp baking soda
Desi ghee
Salt
Wash the spinach, boil it and grind it into a fine paste. Heat half teaspoon of ghee in a pan and fry mustard seeds and urad dal. Add carrots and saute for 2 minutes.
Add sooji and keep stirring. Roast it for 2-3 minutes. Remove the mixture from the pan and add curd to it. Mix well and set it aside.
In the same pan, add cumin seeds, ginger, green chillies, and stir them for a minute. Add spinach paste to the pan and mix well. Turn off the heat and let it cool.
Once cooled, add the spinach mixture to sooji and mix thoroughly.
Add salt and a little amount of baking soda to the sooji mixture. Heat the idli steamer and grease the moulds. Pour the batter into them. Cook the idlis for about 15 minutes.
Use a toothpick to check if the idlis are done. Once cooked, remove them from the moulds and serve them with your favourite chutneys.
