How to make Qubani Ka Meetha?

Qubani Ka Meetha, also known as Apricot dessert, is a popular dish from Hyderabad. It is particularly enjoyed during Ramadan and is often served at royal dinners to welcome guests. Remarkably, you can prepare this dish in just 15-20 minutes. 

Ingredients for Hyderabad Qubani Ka Meetha:

1. 500 grams soaked dried apricots
2. Half a handful of apricot seeds
3. ¾ cup sugar, or according to taste
4. ¼ cup fresh cream
5. Chopped almonds and cashews

Follow these instructions

Step 1- Begin by cracking the apricot seeds, removing the seeds from inside, and blanching them. Next, clean the dried apricots soaked in water. Remove them from the water and heat them in a non-stick pan to prevent sticking. 

Step 2- In the same pan, add soaked dried apricots, sugar, and water. Stir well and cook for 4-5 minutes until the mixture is cooked. Once the apricots feel tender, gently press them and stir for 1-2 minutes to ensure thorough mixing. 

Step 3- Remove a small portion of the mixture from the pan and allow it to dry. Then, prepare a puree from this dried portion and mix it back into the remaining mixture in the pan. Keep the flame on low and continue cooking the mixture until it thickens. Once it thickens, turn off the heat.

Step 4- Transfer the thickened mixture into a bowl or divide it into four glasses. Top it with fresh cream and small pieces of cashew nuts and almonds. Allow it to sit for about 10 minutes before serving it to guests.
