Pav Bhaji is a beloved Indian street food dish that combines a medley of flavors and textures. It's perfect for lazy Sundays when you crave something hearty and satisfying. Here’s how to make this delicious treat at home:

Ingredients:

- 3 medium-sized potatoes, boiled and mashed
- 1 cup cauliflower florets, finely chopped
- 1 cup green peas
- 1 large onion, finely chopped
- 2 tomatoes, finely chopped
- 1 capsicum (bell pepper), finely chopped
- 4-5 cloves of garlic, minced
- 1-inch piece of ginger, grated
- 2-3 green chilies, finely chopped 
- 1 tablespoon pav bhaji masala
- 1 teaspoon red chili powder 
- 1/2 teaspoon turmeric powder
- Salt to taste
- Butter for cooking
- Fresh coriander leaves, chopped
- Lemon wedges for garnish
- 8-10 pav 

Instructions:

1. Prepare the Bhaji:
   - Heat a tablespoon of butter in a large pan or kadhai.
   - Add minced garlic and grated ginger. Sauté for a minute until fragrant.
   - Add chopped onions and green chilies. Sauté until onions turn translucent.
   - Cook the diced tomatoes until they become soft and pulpy.
   - Mix in chopped capsicum, cauliflower florets, and green peas. Cook the vegetables until they are soft, about 5 to 7 minutes.
   - Mash the vegetables using a potato masher or the back of a spoon until they are well blended.
   - Add pav bhaji masala, red chili powder, turmeric powder, and salt to taste. 
   - Add water as necessary to adjust the consistency.  The bhaji should be thick and not watery.
   - Finish off with a generous dollop of butter and chopped fresh coriander leaves. 

2. Prepare the Pav:
   - Slit the pav (dinner rolls) horizontally without cutting all the way through.
   - Heat a griddle or tava and add a little butter.
   - Place the pav on the griddle and toast them until they are golden brown and crisp on both sides.

3. Serve:
   - Serve the hot pav bhaji with a side of freshly toasted pav, lemon wedges, and a dollop of butter on top.
   - Garnish with additional chopped coriander leaves and serve immediately.
