As the Sawan season approaches, devotees prefer to prepare wholesome meal with some dietary restrictions. If you love to indulge in paneer dishes but find it difficult to enjoy them during Sawan period, we’ve got just the right recipe for you. Shahi Paneer, a rich and creamy delicacy loved by many, can easily be prepared during this auspicious time. Here’s a simple shahi paneer recipe without using onion and garlic which is perfect for your Sawan season cravings.

Ingredients you need:
•    Paneer: 250 grams, cubed
•    Fresh tomato puree: 1 cup
•    Cashew nuts: 10-12 pieces, soaked in warm water
•    Fresh cream: 1/2 cup
•    Milk: 1/4 cup
•    Ghee: 2 tablespoons
•    Cumin seeds: 1/2 teaspoon
•    Green cardamom powder: 1/2 teaspoon
•    Red chilli powder: 1/2 teaspoon
•    Turmeric powder: 1/4 teaspoon
•    Garam masala powder: 1/2 teaspoon
•    Sugar: 1 teaspoon (optional)
•    Salt to taste
•    Fresh coriander leaves: for garnish

Follow these instructions:

Step 1- Drain the soaked cashew nuts and blend them into a smooth paste using a blender or food processor. Set aside.

Step 2- Blanch tomatoes in hot water for a few minutes until the skin starts to peel off. Peel and blend them into a fine puree. Alternatively, you can use canned tomato puree.

Step 3- Heat ghee in a pan over medium heat. Add cumin seeds and let them splutter. Pour in the tomato puree and cook for 3-4 minutes until the puree thickens slightly.

Step 4- Add the cashew paste to the pan and mix well with the tomato puree.

Step 5- Add green cardamom powder, red chilli powder, turmeric powder, garam masala powder, sugar (optional), and salt. Mix everything thoroughly.

Step 6- Lower the heat and simmer the gravy for 5-6 minutes until it thickens. Stir occasionally to prevent sticking.

Step 7- Gradually add milk and fresh cream, stirring continuously. Let it simmer for another 2-3 minutes.

Step 8- Gently add the paneer cubes to the gravy and mix well, ensuring the paneer is coated with the creamy sauce. 

Step 9- Cover the pan and let it simmer for 2-3 minutes on low heat to allow the paneer to absorb the flavours of the gravy.

Step 10- Garnish with fresh coriander leaves.

Serve hot Shahi Paneer with naan, roti, or steamed rice. Enjoy!
