Follow this simple recipe to create your batch of creamy and delicious tender coconut ice cream at home.

Ingredients:
2 cups soft coconut juice
1 cup soft (cream) coconut peal
1 can (14 ounces) whole milk powder
2 heavy cups of cream
1 teaspoon vanilla extract

Instructions:
1. Prepare the Tender Coconut:
Start by extracting the tender coconut water from fresh tender coconuts. You will need approximately 2 cups of coconut water for this recipe.
Scoop out the tender coconut flesh (malai) from the coconuts and chop it into small pieces. You will need about 1 cup of tender coconut flesh.

2. Prepare the Ice Cream Base:
In a large mixing bowl, combine the sweetened condensed milk and chopped tender coconut flesh.
Add the tender coconut water to the mixture and stir until well combined. If desired, you can also add a teaspoon of vanilla extract for extra flavor.

3. Whip the Heavy Cream:
In a separate mixing bowl, beat the heavy cream until it forms stiff peaks. This will create a light and airy texture for the ice cream.

4. Combine the Ingredients:
Gently stir the whipped cream into the delicate coconut mixture to fully integrate. Take care not to deflate the whipped cream.

5. Freeze the Ice Cream: Place the ice cream mixture in a freezer-safe container or loaf pan.
Cover the container with a cover or plastic wrap to keep ice crystals from forming.
Freeze the ice cream for at least 6 hours, or until it is firm.

Serve and Enjoy:
Once the ice cream is completely frozen, spoon it into bowls or cones and serve right away.
Garnish with additional tender coconut flesh or shredded coconut if desired.
