The summer vacation has begun, and if you're looking for new recipes to experiment with, here's one for a beloved dish from North India. It is extremely easy to prepare, and your kids will love to relish it for afternoon meals. Let’s head right in.
Ingredients you need:
• 2 cups of wheat flour (atta)
• Oil
• 3-4 boiled potatoes
• 1 teaspoon cumin seeds
• 1 grated teaspoon ginger
• 1 chopped green chilli
• 1 teaspoon coriander powder
• 1/2 teaspoon red chilli powder
• 1/2 teaspoon garam masala
• Salt to taste
• Fresh coriander
• Water
Follow these instructions:
Step 1- In a bowl, prepare dough with wheat flour by adding some salt to it. Gradually add water to form a smooth dough. Cover the dough with a damp cloth and let it rest for 15-20 minutes.
Step 2- In a large bowl, add mashed potatoes, grated ginger chopped green chilli, coriander powder, red chili powder, garam masala, and salt. Mix everything well to prepare the filling.
Step 4- Take a pan and heat two teaspoons of oil in it. Add cumin seeds, let it splutter. Add the prepared filling and stir for 2-3 minutes. Turn off the heat.
Step 5- Add chopped coriander leaves to the potato filling and mix well.
Step 6- To make the kachoris, divide the dough into equal-sized balls. Take one ball, flatten it with your hands, add the filling in the centre, and close it by pinching the edges together.
Step 7- Roll them flat using a rolling pin. Dust some dry flour if required.
Step 8- Heat oil in a deep frying pan over medium heat. Once the oil is hot, add the kachoris into the pan to fry them.
Step 9- Fry the kachoris until they turn golden brown and crispy on both sides, flipping them occasionally.
Step 10- Remove the kachoris from the pan once done and drain the excess oil using paper towels. Repeat the same process for making more kachoris.
