Tomato soup is a classic that's easy to make and perfect for any time of year. This monsoon weather, prepare it from the comfort of your home, and take delight in its deliciousness. Here’s a quick and easy recipe for you. 

Ingredients you need:

•    2 tbsp olive oil
•    1 chopped onion
•    2 cloves garlic
•    1 kg fresh and chopped tomatoes 
•    1 tbsp tomato paste
•    2 cups vegetable broth or water
•    Salt and pepper 
•    1/2 cup heavy cream 
•    Fresh coriander 
•    Croutons or bread, for serving (optional)

Follow these instructions:

Step 1- Wash the tomatoes, peel them and chop them into small pieces. Set aside. 

Step 2- Heat olive oil in a large pot over medium heat. Add chopped onions and sauté for about 5-6 minutes. Add minced garlic to the pot and cook for another 1-2 minutes. Stir occasionally. 

Step 3- Add the chopped tomatoes to the pot, along with tomato paste. Mix well. 

Step 4- Cook the tomatoes for about 10-12 minutes, stirring occasionally.

Step 5- Add vegetable broth or water, and season with salt and pepper to taste. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let the soup simmer for 15-20 minutes.

Step 6- Once the tomatoes become soft, turn off the heat. Use a blender to blend to tomatoes into smooth puree. 

Step 7- Simmer the soup for 5 minutes. Add heavy cream for a creamy texture. Stir well. Add more seasoning if required. 

Step 8- Turn off the heat when the soup starts emanating a nice aroma. Serve the soup in bowls and garnish with fresh coriander leaves.
