Instead, you can turn leftover rotis into a delicious and healthy noodle dish that kids will love. This roti noodle recipe is a fantastic alternative to traditional all-purpose flour noodles. Here’s how to make it.
Ingredients
- 3-4 leftover chapatis
- 1 small onion, thinly sliced
- 1 small capsicum, thinly sliced
- 1 small carrot
- 1-2 green chillies, chopped
- 1 small tomato, finely chopped
- 1 tablespoon oil
- 1/2 teaspoon red chilli powder
- 1 tablespoon soy sauce
- 1 tablespoon vinegar
- 1 tablespoon tomato ketchup
- Salt to taste
- Fresh coriander leaves for garnishing
How to prepare Chapati Noodles
Step 1- Take the leftover chapatis and roll them, then using a sharp knife, cut the rolled chapatis into thin strips like noodles. Separate them gently and keep them aside.
Step 2- Heat oil in a pan over medium heat. Add chopped onion and green chilies and saute lightly.
Step 3- Add finely chopped carrots and chopped capsicum. Cook for a few minutes until they become slightly soft.
Step 4- Add chopped tomatoes and cook till they soften. Add spices and sauces and mix well.
Step 5- Add soy sauce and tomato sauce to it. Mix everything together until the vegetables are well covered with the spices and sauces.
Step 6- Add the chapati strips to the pan. Mix gently together, making sure the noodles are well mixed with the vegetables and spices. Cook this for 2-3 minutes.
Step 7- Garnish with freshly chopped coriander leaves. Serve it hot for breakfast or pack it in kids' lunch boxes.
