Dhokla is a popular and delicious Gujarati snack that's not only easy to make but also incredibly light and fluffy. It is a savoury, steamed cake that makes for a perfect breakfast, snack, or even a light meal. Here’s a simple recipe to help you prepare this tasty dish at home.
Ingredients you need:
• 1 cup besan (gram flour)
• 1/2 cup rice flour
• 1 cup yogurt (plain)
• 1/2 cup water (or as needed)
• 1 tablespoon ginger-green chilli paste
• 1 teaspoon turmeric powder
• 1 teaspoon baking soda
• 1 teaspoon sugar
• Salt to taste
For Tempering
• 2 tablespoons oil
• 1 teaspoon mustard seeds
• 1 teaspoon cumin seeds
• 1 tablespoon sesame seeds
• 2-3 green chillies, sliced
• A few curry leaves
• 1 tablespoon lemon juice
• 2 tablespoons chopped coriander leaves
Follow these instructions:
Step 1- In a large mixing bowl, mix the besan (gram flour) and rice flour. Add yogurt, ginger-green chilli paste, turmeric powder, baking soda, sugar, and salt. Mix well.
Step 2- Gradually add water to achieve a smooth batter. The consistency should be like a thick pancake batter. Make sure there are no lumps. Let the batter rest for about 10 minutes.
Step 3- While the batter is resting, prepare your steamer. If you don’t have a steamer, you can use a large pot with a lid and a heatproof rack.
Step 4- Fill the bottom of the steamer or pot with water, ensuring it doesn’t touch the plate where you’ll be placing the batter.
Step 5- Grease a round or square baking dish or plate with a little oil. Pour the prepared batter into the greased dish. Place the dish in the steamer and cover with a lid.
Step 6- Steam on medium heat for 15-20 minutes. To check if it’s cooked, insert a toothpick or knife into the center. It should come out clean. If needed, steam for a few more minutes until fully cooked.
Step 7- For tempering, Heat oil in a small pan over medium heat. Add mustard seeds and let them splutter. Add cumin seeds, sesame seeds, sliced green chilies, and curry leaves. Sauté for a minute until fragrant. Add lemon juice and mix well.
Step 8- Once the dhokla is cooked, remove it from the steamer and let it cool slightly. Cut the dhokla into squares or diamonds. Pour the tempering evenly over the dhokla. Garnish with chopped coriander leaves.
Store them in the fridge for one-two hours before serving.
