Ingredients:
1 cup basmati rice
2 cups water
1 tablespoon oil
1 teaspoon cumin seeds
1 onion, finely chopped
1 green chili, finely chopped

1/4 cup fresh coriander leaves, chopped
2 tablespoons chutney
Instructions:
Preparation of Basmati Rice:
Rinse the basmati rice thoroughly under running water until the water runs clear. Soak the rice in water for about 20-30 minutes.
Cooking the Rice:
In a deep pan or pot, heat oil over medium heat. Add cumin seeds and let them splutter. Sauté chopped onions and green chilies until they turn translucent. Stir in the mixed vegetables and cook for a few minutes until they are slightly tender.
