Starter

People often add excess starter (usually curd) to the milk, thinking that it would help in making the perfect curd. However, in this case, less is more. Use a little amount of starter to prepare fresh and tasty curd. 

A little sugar

When boiling the milk, you can also consider adding a little amount of sugar to it. It will help prevent curd from turning sour. After doing this, place the mixture in a little warm place to allow the curd to set. After it is set, put it in the refrigerator.
 

Milk's temperature

Knowing the right temperature of milk is also important. Make sure that the milk is neither too hot nor too cold. It should be just warm enough to set. This also prevents it from turning sour.
