Ragi, also known as finger millet, is a powerhouse of nutrients, and when combined with the richness of chocolate, it creates a breakfast treat that's both satisfying and guilt-free. Let's delve into the recipe that will leave your taste buds wanting more while nourishing your body with essential nutrients.

Ingredients:

1 cup ragi flour
2 tablespoons cocoa powder
2 tablespoons powdered sugar
1 teaspoon baking powder
A pinch of salt
1 cup milk
1 ripe banana, mashed
1 teaspoon vanilla extract
1 tablespoon melted butter or oil
Chocolate chips or chopped nuts for topping
Maple syrup or honey for serving

Instructions:

1. Prepare the Dry Ingredients:
In a mixing bowl, combine the ragi flour, cocoa powder, powdered sugar, baking powder, and a pinch of salt. Mix thoroughly until all dry ingredients are uniformly distributed.

2. Mix the Wet Ingredients:
In another bowl, whisk together the milk, mashed banana, vanilla extract, and melted butter or oil until smooth and well combined.

3. Combine the Wet and Dry Ingredients:
Stir gently until just combined. Be careful not to overmix, as it can result in dense pancakes.

4. Let the Batter Rest:
Allow the batter to rest for about 5-10 minutes. This helps the ragi flour absorb the liquid and ensures softer pancakes.

5. Cook the Pancakes:
Heat a non-stick skillet or griddle over medium heat. Slightly coat the surface with oil or butter. Pour a ladleful of batter onto the skillet to form pancakes of your desired size. Spread the batter out into a spherical shape with the back of the spoon. Cook the pancakes on one side for 2-3 minutes, until bubbles appear on the surface. Flip the pancakes and cook for 1-2 minutes on the other side until they are cooked through and lightly golden brown.

6. Serve and Enjoy:
Once cooked, transfer the pancakes to a serving plate. Top them with chocolate chips, chopped nuts, or any other toppings you choose. Drizzle with maple syrup or honey for a touch of sweetness, if desired. Serve the ragi chocolate pancakes warm and enjoy the nutritious and delicious breakfast treat!
