The festival of Eid al-Adha, also known as Bakrid, will be celebrated on June 16 or 17. On this day, a variety of dishes are prepared. Sheer khurma or sewai are especially made for delightful desserts. If you want to add a special twist to the traditional recipe of sheer khurma, consider trying this mango sewai recipe.
Ingredients you need:
• 1 cup sewai (vermicelli)
• 1 litre milk
• 1 cup sugar
• 2-3 ripe mangoes (puree)
• ½ cup chopped mango (for garnish)
• ¼ tsp of cardamom powder
• 10-12 chopped almonds
• 10-12 chopped pistachios
• 1 tbsp ghee
• Saffron threads
• Raisins
Follow these steps:
Step 1- Heat ghee in a pan. Add vermicelli and fry until it turns golden brown. Keep stirring continuously.
Step 2- In another pot, bring milk to a boil. Reduce the flame and let it boil for about 10 minutes.
Step 3- Add the roasted vermicelli to the milk. Cook for about 10 minutes or until vermicelli becomes tender.
Step 4- Add sugar and cardamom powder to the vermicelli and mix well. Then proceed to add saffron threads and continue cooking for 5 minutes.
Step 5- Remove the sewai from heat and let it cool down. Once it is lukewarm, add the mango puree to it. Ensure that sewai is not too hot.
Step 6- Mix everything thoroughly but gently. Make sure you don’t break the vermicelli.
Step 7- Finally, garnish with chopped mangoes, almonds, cashews, pistachios, and raisins. Serve it chilled for best taste.
