Ingredients:
1 cup basmati rice
1 cup mixed vegetables (carrots, peas, beans, potatoes)
1 large onion, sliced
2 tomatoes, chopped
2 green chilies, slit
1 teaspoon ginger-garlic paste
1 teaspoon cumin seeds
1 teaspoon coriander powder
1/2 teaspoon turmeric powder
1/2 teaspoon garam masala
1 bay leaf
2-3 cloves
2-3 cardamom pods
1-inch cinnamon stick
2 tablespoons oil or ghee
Salt to taste
2 cups water
Fresh coriander leaves for garnish
Instructions:
Prepare Rice: Rinse basmati rice under cold water until the water runs clear. Soak for 20 minutes, then drain.
Cook Spices: Heat oil or ghee in a large pan over medium heat. Add cumin seeds, bay leaf, cloves, cardamom pods, and cinnamon sticks. Sauté until fragrant.
Sauté Vegetables: Add sliced onions and cook until golden brown. Stir in ginger-garlic paste and green chilies. Cook for a minute.
Add Tomatoes: Mix in chopped tomatoes and cook until they soften.
Add Spices: Stir in coriander powder, turmeric powder, and salt. Cook for a minute until the spices are well combined.
Add Vegetables: Add mixed vegetables and sauté for a few minutes.
Add Rice: Add the soaked and drained rice. Stir gently to mix.
Add Water: Pour in 2 cups of water and bring to a boil. Reduce heat to low, cover, and simmer for 15-20 minutes, or until rice is cooked and water is absorbed.
Finish: Turn off the heat and let the pulao rest for 5 minutes. Fluff with a fork.
Garnish: Garnish with fresh coriander leaves before serving.
