Ingredients
- For the Kababs:
- 2 cups thick yogurt (dahi)
- 1/2 cup grated paneer (Indian cottage cheese)
- 1/4 cup finely chopped onions
- 1/4 cup coriander leaves
- 1/4 cup finely chopped mint leaves
- 2-3 green chilies, finely chopped
- 1 teaspoon ginger-garlic paste
- 1 teaspoon roasted cumin powder
- 1 teaspoon red chili powder
- Salt to taste
- 2 tablespoons besan (gram flour) or cornflour (for binding)
- For Frying:
- Oil for shallow frying
Instructions
1. Prepare the Yogurt:
- Strain the yogurt in a muslin cloth or fine sieve for a few hours to remove excess water. This will make the kababs firm.
2. Mix Ingredients:
- In a large mixing bowl, combine the strained yogurt, grated paneer, chopped onions, coriander, mint, green chilies, ginger-garlic paste, roasted cumin powder, red chili powder, and salt.
- Add besan or cornflour to the mixture to help bind the kababs. Mix everything until well combined.
3. Shape the Kababs:
- Grease your hands with a little oil and take a small portion of the mixture. Shape it into flat, round patties or kababs.
4. Fry the Kababs:
- Heat the oil. When heated, carefully add the formed kababs.
- Fry for 3 to 4 minutes on each side, or until it turns crispy on both sides.
5. Serve:
- Serve the Dahi Kababs hot with mint chutney or yogurt dip, garnished with fresh coriander leaves.
