Ingredients:

2 large cucumbers, peeled and chopped
1/4 cup fresh mint leaves
1/4 cup honey or agave syrup
1/2 cup water
Juice of 2 limes
Instructions:

Blend the Ingredients: In a blender, combine the chopped cucumbers, fresh mint leaves, honey or agave syrup, water, and lime juice. Blend until smooth and well combined.

Strain the Mixture: To ensure a smooth texture, strain the cucumber mixture through a fine-mesh sieve or cheesecloth to remove any pulp or seeds. 

Pour into Molds: Pour the strained cucumber mixture into popsicle molds, leaving a little space at the top for expansion. If you don't have popsicle molds, you can use small paper cups or ice cube trays with popsicle sticks inserted into the center.

Freeze: Place the filled popsicle molds in the freezer and let them freeze for at least 4-6 hours, or until completely solid. For best results, it's recommended to freeze overnight.

Enjoy: Once the cucumber pops are fully frozen, remove them from the molds by running them under warm water for a few seconds to loosen. Then, gently pull the popsicles out and serve immediately.
