The Essence of Coconut Rice:
At the core of the coconut rice is the humble coconut that is revered for its versatility and distinctive flavor. The dish usually consists of cooked rice with coconut milk, giving it a creamy texture and subtle sweetness. In addition to coconut milk, other key ingredients include fresh coconut milk, aromatic spices, and aromatic herbs, all of which contribute to the subtle flavors of the dish

Ingredients:
To make coconut rice you will need:

1 cup basmati or jasmine rice
1 cup coconut milk
1/2 cup fresh coconut milk
1 tablespoon coconut oil or butter
Handmade curry leaves
1 tablespoon mustard seeds
1 tablespoon cumin
2-3 green peppers slit long (adjust as desired).
A pinch of turmeric powder
Salt of the scent
Fresh cilantro leaves for garnish

Preparation Method:

1. Rinse the rice thoroughly under running water until the water runs clear. Remove and set aside.

2. In a deep skillet or rice cooker, heat the coconut oil or butter over medium heat.

3. Add mustard seeds and cumin seeds. Allow them to crystallize.

4. Add the diced green chilies and curry leaves to the pan. Stir for a minute until fragrant.

5. Then add the fresh coconut milk to the pan and lightly fry until golden brown.

6. Pour in the coconut milk and bring it to a gentle simmer. 

7. Stir in the drained rice, turmeric powder, and salt. Mix well to combine.

8. Cover the saucepan with a tight-fitting lid and let the rice cook on low heat until all the liquid is absorbed and the rice is cooked through, usually about 15-20 minutes.

9. Once the rice is cooked, fluff it gently with a fork. Garnish with fresh cilantro leaves before serving.
