During the Indian summer (March to May), mango is picked and sold in all Indian markets. During this season, various mango kinds are available for purchase.
Mango lassi tastes best when made with ripe, sweet mangoes of the season. However, if you want to have a delicious lassi with new tastes from the king of fruits, use fresh mangoes.
This recipe has the perfect quantities of yogurt and mangoes. As a result, you won't end yourself drinking mango puree or sweetened yogurt instead of mango lassi. This mango lassi recipe is ideal because of the proper balance of these two ingredients.
Step 1: Rinse, peel, and chop 3-4 medium-sized mangoes. You'll need roughly 2 cups of diced mango.
Step 2: Pour the diced mangoes into a blender. Add 4 to 5 teaspoons of sugar, honey, or any sweetener of your choosing. If you prefer not to use any sweeteners or if the mangoes are already quite sweet, you can do so.
Step 3: Optional flavorings include ½ teaspoon cardamom powder, 8-10 saffron threads, or 1 tablespoon rosewater. I added some rosewater.
Step 4: Blend until everything is smooth. The texture is pulpy and mushy, with no small bits of mango.
Step 5: Combine 2 cups chilled curd (dahi) or yogurt with 2 to 3 tablespoons light cream. It should be noted that adding cream is entirely optional.
Step 6: Optional: add 4 to 5 ice cubes. If you want the lassi to be somewhat thinner, blend in extra water or milk.
Step 7: Blend until all of the ingredients are evenly distributed and the yogurt becomes smooth. Sample a couple spoonfuls of mango lassi. If it feels little sour or tangy, or if it is not sweet enough to your liking, add a few teaspoons of sugar and combine again.
Step 8: Pour mango lassi into glasses and decorate with dry fruits, if desired.
