This Father's Day, surprise your dad with a delicious and wholesome Banana Oat Cake that's sure to make his day extra special. This easy-to-make cake is not only scrumptious but also packed with nutritious ingredients like bananas and oats, making it a guilt-free indulgence for the whole family to enjoy.

Ingredients:

- 2 ripe bananas
- 1 cup rolled oats
- 1/2 cup plain yogurt
- 1/4 cup honey or maple syrup
- 2 eggs
- 1/4 cup melted coconut oil 
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- A pinch of salt
- Optional: chopped nuts or chocolate chips for topping

Instructions:

1. Preheat the oven: Set the temperature to 350°F (175°C). Grease a cake pan with butter or cooking spray and set aside.

2. Mash the Bananas: In a large mixing bowl, mash the ripe bananas using a fork until smooth and creamy.

3. Mix Wet Ingredients: Add the eggs, melted coconut oil or butter, honey or maple syrup, plain yogurt, and vanilla extract to the mashed bananas. 

4. Combine Dry Ingredients: In a separate bowl, whisk together the rolled oats, baking powder, baking soda, cinnamon, and a pinch of salt.

5. Combine wet and dry ingredients: Slowly incorporate the dry ingredients into the wet mixture, stirring until they are just blended. Be careful not to overmix.

6. Bake the Cake: Pour the batter into the prepared cake pan, spreading it out evenly with a spatula. Sprinkle chopped nuts or chocolate chips on top if desired.

7. Bake in the preheated oven for 25-30 minutes, or until the cake is golden brown and a toothpick inserted into the center comes out clean.

8. Cool and Serve: Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. Once cooled, slice the cake into pieces and serve.
