Nothing is as refreshing and satisfying as a frozen creamy dessert in the scorching heat of summer. Among the many ice creams and frozen treats, one stands out for its rich flavor and cultural significance: pistachio kulfi. Kulfi, a traditional frozen dessert from the Indian subcontinent, is loved by millions for its creamy texture and unique taste. 

Here, we explore a delicious homemade recipe for pistachio kulfi, combined with finely nutty pistachios and sweetened condensed milk.

Ingredients:

2 cups full-fat milk
1 cup sweetened condensed milk
1/2 cup powdered pistachios
1/4 teaspoon cardamom powder
A pinch of saffron hammer
Decorative pistachio pieces

Instructions:

Preparation of Pistachios: Begin by blanching the pistachios in hot water for a few minutes. This process helps to remove the skin easily. Once blanched, drain the pistachios and peel off the skins. Allow them to dry completely.

Grinding Pistachios: Once the pistachios are dry, grind them into a fine powder using a food processor or a mortar and pestle. 

Preparation of Kulfi Mixture: In a heavy-bottomed saucepan, bring the full-fat milk to a boil. Once the milk comes to a boil, reduce the heat to low and simmer, stirring occasionally, until the milk reduces to about half its original volume. 

Add the condensed milk and pistachios: Reduce the milk and add the sweetened condensed milk to the pan and mix well. Then, add the ground pistachios, cardamom powder, and saffron fibers (if using). Stir the mixture well to make sure all the ingredients are well mixed.

Cooling and Thawing: Allow the kulfi mixture to cool to room temperature. Pour the mixture into kulfi molds or small glasses, leaving room at the top for expansion as it cools.

Freezing: Place the Kulfi molds or glasses in the freezer and let them freeze for at least 6-8 hours, or preferably overnight until completely set.
